White Chocolate Cherry Scones
Ingredients:
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 8 tablespoons unsalted butter, very cold, cut into small cubes
- ½ cup dried sour cherries; chopped
- ½ cup white chocolate chips, roughly chopped
- ½ cup sour cream
- 1 large egg
- ½ teaspoon pure vanilla extract
Directions:
- Preheat oven to 400F. Line a baking sheet with parchment paper and set aside.
- Cut butter into small cubes. Keep cold.
- In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Use a pastry blender to cut the cold cubes of butter into the dry ingredients until the dough looks like coarse crumbs.
- Mix in chocolate and cherries and set aside.
- In a small bowl, whisk together the sour cream, egg, and vanilla until smooth.
- Using a fork, stir the sour cream mixture into the flour mixture until large dough clumps form. Use your hands to press the dough against the side of the bowl.
- The dough will seem sticky in places and too dry in other spots, but continue gently pressing the dough together until the dough just comes together.
- Place dough on a lightly floured counter top or large cutting board.
- Pat the dough into a 7-8 inch circle about ¾” thick.
- Use a sharp knife to cut the circle of dough into 8 equal wedges
- Place on prepared baking sheet about 1” apart. Bake 15-17 minutes, or golden brown.
